Minty pa­leo tzatziki

4 Le­banese cu­cum­bers, peeled and chopped 1 gar­lic clove, grated 1 av­o­cado Juice of 1 lemon 2 tbsp ex­tra-vir­gin olive oil 3 tbsp mint leaves, finely chopped 2 tsp chopped chives 2 tsp dried dill Sea salt and freshly ground black pep­per

1 Place the cu­cum­ber, gar­lic, av­o­cado, lemon juice and olive oil in a food pro­ces­sor and pulse un­til you get a nice thick, creamy tex­ture. Tip the mix­ture into a bowl, stir in the herbs and sea­son with salt and pep­per to taste.


The aroma of mint ac­ti­vates the sali­vary glands in our mouth as well as glands which se­crete di­ges­tive en­zymes, thereby fa­cil­i­tat­ing di­ges­tion.
