“We and the boys go through phases, but at the mo­ment – es­pe­cially as the weather is warm­ing up – they all love it when I make a Viet­namese noo­dle salad with chicken or beef. “I soften thin ver­mi­celli noo­dles in boil­ing wa­ter and then finely chop veg­gies – what­ever’s in the fridge, but usu­ally it in­cludes cu­cum­ber and car­rot. Then I add lots of mint, co­rian­der, Thai basil – we have this grow­ing in our gar­den – some chilli, and the char­grilled chicken or beef, finely sliced. “For the dress­ing, I boil up equal parts vine­gar and sugar and add some fish sauce, chilli and gar­lic. Fi­nally, on top I put some crunchy fried shal­lots, a few peanuts and some more fresh herbs. They go mad for it!”
