Super simple rainbow salad with blue­ber­ries and macadamias

There’s loads of skin-lov­ing magic in this creation – macadamia nuts with their healthy fats and min­er­als, plus blue­ber­ries for an­tiox­i­dants, which help to pre­vent pre­ma­ture skin age­ing and free rad­i­cal dam­age. It’s bril­liant on its own or as a side to your favourite source of pro­tein – if you want to make it a mega skin-boost­ing meal, think about adding oily fish such as salmon or mack­erel.

1 bunch of kale, stalks re­moved and leaves finely chopped 1 av­o­cado, diced ½ cup (60g) dried blue­ber­ries ¼ cup (35g) chopped macadamia nuts 1 large car­rot, grated Zest and juice of 1 lime 2 tbsp ex­tra-vir­gin olive oil Salt flakes and freshly ground black pep­per

1 I pre­pare this in the same bowl I serve it in, so grab a big, beau­ti­ful serv­ing bowl. All I do is throw in the kale along with the diced avo, then add the blue­ber­ries, macadamias, car­rot and lime zest. Give it a good old mix about, dress it with the lime juice and olive oil, sea­son to taste and tuck on in!

TIP:

The dried blue­ber­ries give this dish a nice chewy tex­ture, but you can use fresh berries if you pre­fer.
