These little treats are super-good for your hair and tick all the paleo and vegan boxes. If you’d like to tailor them to make them fructose-friendly then just replace the maple syrup with rice malt syrup. This recipe would also make an awesome body scrub – give it a try and your skin will be thanking you too!
½ cup (125ml) coconut oil, melted, plus extra if necessary ½ cup (55g) almond meal 3 tbsp maple syrup, plus extra if necessary 1 cup (90g) desiccated coconut ½ tsp ground nutmeg 1 vanilla pod, split and seeds scraped (or ¼ tsp vanilla powder or extract) Pinch of salt flakes
1 Combine all the ingredients in a large bowl and mix together thoroughly, adding a little more coconut oil and another tablespoon of maple syrup if the mixture is too crumbly. Shape the mixture into little balls (it’s easier with damp hands), arrange them on a tray and whack them in the freezer for about 20 minutes to set. Store in an airtight container in the fridge for up to two weeks and share them with your mates.
