The bit­ter taste of some veges can put some peo­ple off. But, say re­searchers from Pur­due Univer­sity in the US, the se­cret to con­sum­ing more bit­ter foods is sim­ply to keep eat­ing them. Re­searchers fol­lowed 64 par­tic­i­pants for six weeks, who drank milk flavoured with dif­fer­ent amounts of un­sweet­ened co­coa. As they drank more bit­ter milk, their saliva changed to pro­duce pro­teins that made the milk taste less bit­ter. Es­sen­tially, the more greens you eat, the less bit­ter they’ll taste – and the less sugar you use, the less you’ll need. But once par­tic­i­pants stopped con­sum­ing the bit­ter foods, their saliva re­verted to its orig­i­nal struc­ture. Just an­other rea­son to keep eat­ing your greens!
