If the vaunted yabby jaf­fle is the star turn at Mon­ster, then the wagyu tongue sand­wich would have to be the im­pres­sive un­der­study. Rounds of lightly char-grilled bread bind to­gether slow-cooked wagyu tongue, sweet car­rot and zuc­chini pickle, horse­rad­ish and mus­tard.
