Gun chef Pablo Torde­sil­las Gar­cia has joined La Rosa as co-head chef as the up­mar­ket trat­to­ria takes a turn to­wards a Ro­man style with what its own­ers call a Ro­man grill pres­ence. Smoked Monte San Bi­a­gio sausage and Ro­man-style roasted Suf­folk lamb are on the new menu, along with ca­cio e pepe pasta reimag­ined as cheesy ravi­oli dressed with Tel­licherry pep­per, and a fan­tas­tic dish of tripe braised with tomato and pecorino.
