If you still con­sider Bris­bane a big old coun­try town, it’s time to plan a re­turn visit, says GT’s Queens­land ed­i­tor, Fiona Don­nelly. She has tracked the city’s trans­for­ma­tion for more than a decade and be­lieves it’s on the brink of a “quan­tum leap for­ward”. “Luxe new ho­tels are open­ing and in­ter­state op­er­a­tors are stak­ing out ter­ri­tory,” she says. “Chefs and restau­ra­teurs are up­ping their game.
