Once more paint strip­per than palat­able, they’ve had a bad rap for years – and fair enough. But ac­cord­ing to Stu­art Knox, wine af­cionado and owner of Syd­ney wa­ter­ing hole Fix St James, times have changed. “We’re now pro­duc­ing some of the best or­ganic, biodynamic, or­ange and nat­u­ral wines in the world,” he says, most of which are much kin­der on you the morn­ing af­ter.
