WHAT TO DRINK: 4. 2014 Arfion ‘Smoke­stack Light­ning’ Gewurz­traminer, Yarra Val­ley VIC, $29; KNOX SAYS: “Gewurz­traminer may be con­sid­ered sweet, but af­ter spend­ing 150 days on skins it is com­pletely bone dry. It has tex­ture and length that al­lows it to stand up to bolder dishes. Think more ginger spice than typ­i­cal Turk­ish de­light notes.”
