Drink with white meats and seafood.” OR­ANGE WHAT IT MEANS: White wine made with ex­tended skin con­tact (up to 300 days). Not nec­es­sar­ily or­ganic, biodynamic or nat­u­ral but it can be. More a tech­nique than a va­ri­etal. WHAT TO DRINK: 4. 2014 Arfion ‘Smoke­stack Light­ning’ Gewurz­traminer, Yarra Val­ley VIC, $29; arfion.com.au KNOX SAYS: “Gewurz­traminer may be con­sid­ered sweet, but af­ter spend­ing 150 days on skins it is com­pletely bone dry. It has tex­ture and length that al­lows it to stand up to bolder dishes. Think more ginger spice than typ­i­cal Turk­ish de­light notes.”
