WINEMAKER Helen McCarthy What do you love about aged chardonnay?

I love seeing the secondary character development in chardonnay. For me, great aged chardonnays change in the glass over time and keep surprising me. I must say that many of the chardonnays I enjoy as mature wines were on my favourite list when they were young too.
