Cellaring wine is a journey. Watching a young wine evolve over time is truly amazing. In the medium-term you see generous, primary fruit characters with increased complexity and suppleness. In the longer-term you experience the wine in total harmony – further tannin integration and the development of tertiary flavours. The quality out of the Hilltops in 2015 was outstanding, producing wines with balance, concentration and longevity.
