Machine-harvested, 7 days on skins, free-run juice wild-fermented and matured in oak (20% new) for 12 months. The full-on approach might have been a disaster, but was in fact a triumph. While creating layered complexity, it is long and fresh, with vibrant mouthfeel, and lemon curd, citrus and integrated, faintly toasty oak. 11.9% alc. This is our first take on a fumé blanc. Sauvignon blanc has always performed really well on our site, so we thought we’d take things to the next level with a wild ferment, seven days on skins and maturation in oak for 11 months (20% new). The result blew us away and this wine is now a regular feature.
