Hand-picked, chilled, destemmed into the Yarra Yer­ing half-tonne ‘tea-chest’ small fer­menters with some stalks added back, hand-plunged twice daily, ma­tured in French oak (30% new) for 10 months. A Win­ston Churchill fig­ure in Yarra Val­ley’s pinot noirs, stand­ing higher than all oth­ers. It has layer upon layer of flavours de­rived from the fruit, unique fer­men­ta­tion, tan­nins, oak, and X-fac­tor from vines near­ing 50yo. It has no need to ad­ver­tise its qual­ity or style as it glides through the length of the medium-bod­ied palate. 14% alc.

WINE­MAKER Sarah Crowe How did you ap­proach the mak­ing of this wine?

A warm 2016 vin­tage de­liv­ered grapes with am­ple flavour. I made some ad­just­ments to the fer­men­ta­tion tech­niques to in­crease the per­fume and soften the wine. The re­sult is fra­grance and a silky palate, which I be­lieve pinot should have in spades.
