2016 YARRA YERING PINOT NOIR

Hand-picked, chilled, destemmed into the Yarra Yering half-tonne ‘tea-chest’ small fermenters with some stalks added back, hand-plunged twice daily, matured in French oak (30% new) for 10 months. A Winston Churchill figure in Yarra Valley’s pinot noirs, standing higher than all others. It has layer upon layer of flavours derived from the fruit, unique fermentation, tannins, oak, and X-factor from vines nearing 50yo. It has no need to advertise its quality or style as it glides through the length of the medium-bodied palate. 14% alc.
WINEMAKER Sarah Crowe How did you approach the making of this wine?
A warm 2016 vintage delivered grapes with ample flavour. I made some adjustments to the fermentation techniques to increase the perfume and soften the wine. The result is fragrance and a silky palate, which I believe pinot should have in spades.
