Hand-picked and sorted, open-fer­mented (wild), all into French oak (30% new) for 18 months. A warm, con­cen­trated red with black­berry, san­dal­wood, bi­tu­men and roasted plum char­ac­ters laid on the line, creamy vanillin oak spread like a soft rug over the riot of flavour. Oak is at a high pitch, as is al­co­hol warmth, but there’s no deny­ing the im­pact of this wine. We’re talk­ing brutish in­ten­sity here. CM 15.3% alc. We crop our Heath­cote shi­raz at re­ally low lev­els ev­ery year, which makes it a pow­er­house of a wine. I didn’t want it to be all about in­ten­sity, so I used a few wine­mak­ing tech­niques and two types of oak to add some com­plex­ity and make it more nu­anced.
