How do you achieve a fumé style?

Time spent in French oak with lees stir­ring weekly to en­hance tex­ture and mouth­feel. The cool-cli­mate com­plex­ity and acid come from Tas­ma­nian fruit, and the trop­i­cal notes from the Pyre­nees.
