A 55/35/10% blend, destemmed, crushed and wild-fermented separately, the savagnin and 90% of the traminer cool-fermented in tank, 10% of the traminer and the petit manseng fermented in old French hogsheads, matured for 8 months. A walk on the wild side from start to finish. It is fiercely intense, but technically without fault; indeed, the contortions of the very complex and micro-focused vinification have been played to perfection.
