How do you ap­proach the wine and food pair­ing at At­tica?

Our matches aren’t al­ways wine – they can be any­thing from sake to beer and cock­tails. The wines we do work with tend to be Aus­tralian and largely Vic­to­rian, with a few ex­em­plary in­ter­na­tional ones too. It’s a lot of fun try­ing to think of dif­fer­ent drinks to pair with Ben Shewry’s food. We try to throw out a lot of stuff that’s unique and en­gag­ing, and wines with some age on them too. We also of­fer juice and tea pair­ings for those who want some­thing other than al­co­hol.
