Tight, long and re­fresh­ingly tart, yet with the gen­er­ous flow and drive of juicy stone fruit and cit­rus. Flo­ral, nutty and creamy in tex­ture, the palate is un­der­pinned by pu­rity and min­er­al­ity, Light, nim­ble, tex­tu­ral and full of po­ten­tial.

What de­fines your style of chardon­nay?

It is driven by four el­e­ments – flavour, tex­ture, bal­ance and fresh­ness. Thought­ful site and clonal se­lec­tion, and pre­cise har­vest tim­ings are key in cap­tur­ing bright acid­ity and flavour in­ten­sity. This nat­u­ral bal­ance af­fords tex­ture and fur­ther char­ac­ter to be built through nat­u­ral fer­men­ta­tion in bar­rel and time on lees.

What tech­niques do you use for this wine?

Hand-picked and whole-bunch pressed, and racked with solids to bar­rel, the juice was left in bar­rel to fer­ment nat­u­rally, and aged on full-lees for eight months with oc­ca­sional stir­ring. It was blended and bot­tled with­out fin­ing or fil­ter­ing, so may have a sub­tle cloudy ap­pear­ance.
