2017 Oakdene Single Vineyard Liz’s Chardonnay

Bright straw green. Complex bouquet, with notes of pear, custard apple, white peach and barrel ferment characters. Fresh and bright, with a generous midpalate weight and creamy texture, ripe white peach, apple and pear balanced by a citrus acidity and spicy oak finish.
What defines your style of chardonnay?
It is defined by our vineyard, which produces fruit with great intensity (in the white peach spectrum) and high natural acidity. We aim to make chardonnay with powerful mid-palate fruit, with balanced acidity and judicious use of quality French oak.
What techniques do you use for this wine?
The fruit is hand-harvested and pressed direct to barrel for fermentation using wild yeast. Then matured in tight-grained French oak (30 per cent new) for 11 months, with regular lees stirring and minimal MLF, then fined, filtered and bottled
