Bright straw green. Com­plex bou­quet, with notes of pear, cus­tard ap­ple, white peach and bar­rel fer­ment char­ac­ters. Fresh and bright, with a gen­er­ous mid­palate weight and creamy tex­ture, ripe white peach, ap­ple and pear bal­anced by a cit­rus acid­ity and spicy oak fin­ish.

What de­fines your style of chardon­nay?

It is de­fined by our vineyard, which pro­duces fruit with great in­ten­sity (in the white peach spec­trum) and high nat­u­ral acid­ity. We aim to make chardon­nay with pow­er­ful mid-palate fruit, with bal­anced acid­ity and ju­di­cious use of qual­ity French oak.

What tech­niques do you use for this wine?

The fruit is hand-har­vested and pressed direct to bar­rel for fer­men­ta­tion us­ing wild yeast. Then ma­tured in tight-grained French oak (30 per cent new) for 11 months, with reg­u­lar lees stir­ring and min­i­mal MLF, then fined, fil­tered and bot­tled
