It has a flinty oys­ter shell nose with white blos­som, grape­fruit peel, pears and lemon­grass. With a pil­lowy fruit weight and lovely tex­ture, this wine is fine-boned with a hint of oak bar­rel char.

This chardon­nay rep­re­sents a shift in our style; it is el­e­gant with a light­ness of fruit pu­rity and per­fectly bal­anced oak play­ing a sup­port­ing role. Re­strained fruit car­ried by our sig­na­ture cool-cli­mate acid­ity keeps it crunchy and re­fresh­ing. What wine­mak­ing tech­niques do you use

for this wine? It is whole-bunch pressed and wild yeast fer­mented in French oak (30 per cent new). We no longer prac­tice mal­o­lac­tic fer­men­ta­tion re­li­giously, pre­fer­ring in­stead to taste the newly fer­mented wine and de­cide if it’s de­sir­able. The bal­ance in

2017 was al­ready per­fect and so none was used. Bot­tling af­ter 10 months cap­tures the bright­ness of fruit.
