2017 Yarra Yering Chardonnay

It has a flinty oyster shell nose with white blossom, grapefruit peel, pears and lemongrass. With a pillowy fruit weight and lovely texture, this wine is fine-boned with a hint of oak barrel char.
What defines your style of chardonnay?
This chardonnay represents a shift in our style; it is elegant with a lightness of fruit purity and perfectly balanced oak playing a supporting role. Restrained fruit carried by our signature cool-climate acidity keeps it crunchy and refreshing. What winemaking techniques do you use
for this wine? It is whole-bunch pressed and wild yeast fermented in French oak (30 per cent new). We no longer practice malolactic fermentation religiously, preferring instead to taste the newly fermented wine and decide if it’s desirable. The balance in
2017 was already perfect and so none was used. Bottling after 10 months captures the brightness of fruit.
