Sourced from south­ern Mar­garet River vine­yards, our chardon­nay dis­plays pre­cise, del­i­cate acid, with flavours of white peaches and orange blos­som. What tech­niques do you use for this

wine? Picked early to re­tain nat­u­ral acid, our chardon­nay is 100 per cent bar­rel fer­mented, with 100 per cent wild yeast and mal­o­lac­tic fer­men­ta­tion is en­cour­aged on 30 per cent of the bar­rels. We stir it reg­u­larly to build tex­ture, and all solids are cap­tured from the press, post whole-bunch press, to en­cour­age the slatey, oys­ter-shell tex­ture.
