What defines your style of chardonnay?
Sourced from southern Margaret River vineyards, our chardonnay displays precise, delicate acid, with flavours of white peaches and orange blossom. What techniques do you use for this
wine? Picked early to retain natural acid, our chardonnay is 100 per cent barrel fermented, with 100 per cent wild yeast and malolactic fermentation is encouraged on 30 per cent of the barrels. We stir it regularly to build texture, and all solids are captured from the press, post whole-bunch press, to encourage the slatey, oyster-shell texture.
