Intense aromas of green apples and white peach with underlying savoury oak. The palate is full of powerful white peach, citrus fruit flavours with complex flinty and toasted notes.
What defines your style of chardonnay?
This is the first year we’ve produced this wine due to a small parcel being a standout in quality. This single vineyard usually ends up in our Poole’s Rock Chardonnay blend, but this year we kept this special parcel separate. In our chardonnays, we aim for balance between fruit freshness and subtle oak complexity, and a textural palate.
What techniques do you use for this wine?
The hand-picked fruit was whole-bunch pressed and the cloudy juice transferred to brand new French oak where it fermented and then matured for eight months. This wine’s powerful, complex and textural palate results from the use of traditional barrel fermentation with fortnightly lees stirring, no malolactic fermentation, and minimal finings.
