In­tense aro­mas of green ap­ples and white peach with un­der­ly­ing savoury oak. The palate is full of pow­er­ful white peach, cit­rus fruit flavours with com­plex flinty and toasted notes.

What de­fines your style of chardon­nay?

This is the first year we’ve pro­duced this wine due to a small par­cel be­ing a stand­out in qual­ity. This sin­gle vineyard usu­ally ends up in our Poole’s Rock Chardon­nay blend, but this year we kept this spe­cial par­cel sep­a­rate. In our chardon­nays, we aim for bal­ance be­tween fruit fresh­ness and sub­tle oak com­plex­ity, and a tex­tu­ral palate.

What tech­niques do you use for this wine?

The hand-picked fruit was whole-bunch pressed and the cloudy juice trans­ferred to brand new French oak where it fer­mented and then ma­tured for eight months. This wine’s pow­er­ful, com­plex and tex­tu­ral palate re­sults from the use of tra­di­tional bar­rel fer­men­ta­tion with fort­nightly lees stir­ring, no mal­o­lac­tic fer­men­ta­tion, and min­i­mal fin­ings.
