In a study of al­most 200,000 par­tic­i­pants, those who con­sumed the least amount of gluten had a 13 per cent in­creased risk of type 2 di­a­betes. Why? Be­cause gluten-free pack­aged foods have less ce­real fi­bre, which is pro­tec­tive against di­a­betes.
