Pearl barley is simply barley with the outer bran layer removed, giving it a ‘pearly’ appearance. Finding a packet in the supermarket can be a rare find — like successfully diving for pearls. They’re usually tucked away next to the dried legumes, but you can also buy the grain in bulk at health food stores.
