Bar­ley looks like brown rice and tastes a bit like oats, but this old-school grain still strangely trails its com­peti­tors in pop­u­lar­ity.

Pearl bar­ley is sim­ply bar­ley with the outer bran layer re­moved, giv­ing it a ‘pearly’ ap­pear­ance. Find­ing a packet in the su­per­mar­ket can be a rare find — like suc­cess­fully div­ing for pearls. They’re usu­ally tucked away next to the dried legumes, but you can also buy the grain in bulk at health food stores.
