dairy free diabetes friendly ½ cup mixed nuts,
roughly chopped ¼ cup mixed seeds 2 cups rolled oats ½ cup dried fruit,
roughly chopped ½ cup nut butter 2 tablespoons honey 1 egg, lightly beaten 1 Preheat oven to 160°C. Line a large baking tray and a 20 x 20cm square baking tin with baking paper. 2 Spread nuts and seeds over the prepared baking tray. Bake for 5–10 minutes, or until they are just golden. 3 Combine oats, toasted nuts and seeds in a mixing bowl with dried fruit. Make a well in the centre. Add nut butter, honey and egg. Mix until all the ingredients are well moistened. 4 Using a wet hand, gently press mixture into prepared baking tin and bake for 20–25 minutes. Cool completely in the tin on a wire rack. Remove from tin and cut into 16 bars. Note Store bars in an airtight container for up to one week.
