SPICY THAI SALAD

½ cour­gette

½ cu­cum­ber

1 car­rot

½ mango

3 radishes

¼ red onion

Sprigs of mint

½ fresh chili

1 lime

Toasted peanuts

DRESS­ING

2 ta­ble­spoons peanut but­ter

1 tea­spoon agave

1 ta­ble­spoon of ap­ple cider vine­gar

1 tea­spoon ta­mari soy

½ chopped chili

Juice ½ lime

1 With a cheese grater or man­do­line. Shave your cour­gette, cu­cum­ber and car­rots into beau­ti­ful rib­bons. Slice your radishes, red onion, mango, fresh chili and ar­range all on a pretty plate.

2 In a bowl mix all your dress­ing in­gre­di­ents and driz­zle on top of your salad.

3 Dec­o­rate with mint leaves, toasted peanuts and lime half on your plate.
