1 cup raw cashew nuts

8-9 plump med­jool dates, seeds re­moved

¼ cup ca­cao pow­der

1 ta­ble­spoon white sesame seeds

¼ cup ground chia seeds

1 In a food pro­ces­sor, pulse all in­gre­di­ents for a minute or two un­til dough like and stick to­gether. Roll into balls and serve.

Why would you want to grab a sugar & dairy filled choco­late bar when you can try some­thing like this?! Why did I ref­er­ence Choco­late Mud Cake? Be­cause it se­ri­ously takes like one! Only dif­fer­ence is you’re not go­ing to feel as guilty af­ter­wards!

Al­though you can eat th­ese lit­tle de­lights straight away, I find re­frig­er­at­ing them for a cou­ple of hours to har­den a lit­tle which to me tastes much bet­ter. You may of course also freeze them for a more chewy con­sis­tency, ei­ther way you’re go­ing to love them.
