There are chefs and there are chefs. We meet the whole spec­trum tonight, from White, the most in­flu­en­tial chef of his gen­er­a­tion, to the one who sends a plate of un­cooked yab­bies out into a room­ful of peo­ple. You’d think, even though it sounds fright­en­ing to a per­son who isn’t a pro­fes­sional, that cook­ing three­courses for 120 should be fairly man­age­able. You’d think . . .
