KIDS, knowing how to make decent mashed potato is a very important skill to have in life. You can put it on your resume if it’s good enough. Gary bills his as the perfect mash – a big call, but this is master class, and he is a gun. And it is, let’s face it, mashing potatoes. Would you do George’s quail in vine leaves? A nice idea in principle but could you be bothered? You’d rather, if you were going to fiddle about, make the sweet pastry raspberry tart, surely. Especially since they’re in the Barossa, home of fabulous berries and – sure – vine leaves.
