Gary bills his as the per­fect mash – a big call, but this is mas­ter class, and he is a gun. And it is, let’s face it, mash­ing pota­toes. Would you do Ge­orge’s quail in vine leaves? A nice idea in prin­ci­ple but could you be both­ered? You’d rather, if you were go­ing to fid­dle about, make the sweet pas­try rasp­berry tart, surely. Es­pe­cially since they’re in the Barossa, home of fab­u­lous berries and – sure – vine leaves.
