QUINOA FRITTERS WITH KIWI SALSA
SERVES 4 PREP 20 MINUTES
COOK 30 MINUTES $3.85 PER SERVE
1 cup tri-colour quinoa
½ medium cauliflower, cut into florets
½ cup rolled oats 4 eggs, lightly beaten 6 spring onions, sliced 1½ cups grated cheddar cheese
Finely grated rind of 1 lemon Salt and pepper Oil, for shallow frying
250g punnet red and yellow cherry tomatoes, quartered 2 kiwi fruit, peeled and diced 1 tablespoon olive oil
STEP 1 Rinse the quinoa and place in a medium saucepan with 2 cups water. Bring to a boil; immediately reduce heat to a simmer. Add a pinch of salt. Cover and cook for 15 minutes. Remove from heat. Fluff with a fork and set the lid ajar to rest.
STEP 2 In a food processor, pulse cauliflower until it resembles couscous (you will need 2 cups cauliflower crumbs). Process oats until fine (a few cauliflower crumbs in bowl is okay). STEP 3 Combine oats, quinoa, cauliflower, egg, onion, cheese and lemon in the food processor bowl and pulse until just combined. Season to taste and set mixture aside.
STEP 4 Make salsa by tossing together all ingredients. Set aside.
STEP 5 Thinly cover the base of a large frying pan with oil and heat over medium-high.
Drop 1⁄4 cups of mixture into the pan and fry, in batches, for 3-5 minutes on each side, turning carefully with an egg flip. Cool slightly before serving with salsa.
