2⁄3 cup cranberry juice 2⁄3 cup lemon juice 2⁄3 cup caster sugar 3 cups frozen strawberries, thawed Baby mint leaves, to serve 2 x 750ml bottles chilled sparkling wine, to serve
Combine juices and sugar in a saucepan. Cook and stir over low heat for 3 minutes or until sugar dissolves. Add strawberries; cook and stir for 3 minutes or until combined. Cool for 5 minutes. Place in a blender; blend until smooth. Pass strawberry mixture through a fine strainer into a large jug.
Pour mixture into two 12-hole ice-cube trays. Freeze overnight or until set. Divide strawberry ice cubes and mint leaves between eight serving glasses. Serve topped up with sparkling wine.
