STRAW­BERRY SUR­PRISE

2⁄3 cup cran­berry juice 2⁄3 cup lemon juice 2⁄3 cup caster sugar 3 cups frozen straw­ber­ries, thawed Baby mint leaves, to serve 2 x 750ml bot­tles chilled sparkling wine, to serve

Com­bine juices and sugar in a saucepan. Cook and stir over low heat for 3 min­utes or un­til sugar dis­solves. Add straw­ber­ries; cook and stir for 3 min­utes or un­til com­bined. Cool for 5 min­utes. Place in a blender; blend un­til smooth. Pass straw­berry mix­ture through a fine strainer into a large jug.

Pour mix­ture into two 12-hole ice-cube trays. Freeze overnight or un­til set. Di­vide straw­berry ice cubes and mint leaves be­tween eight serv­ing glasses. Serve topped up with sparkling wine.
