MIGUEL’S ANZAC BISCUITS
SERVES 10 PREP 5 MINUTES COOK 20 MINUTES 32¢ EACH
½ cup golden syrup 1½ teaspoons baking soda 2 tablespoons hot water 100g caster sugar
100g desiccated coconut 100g plain flour
100g rolled oats
STEP 1 Preheat oven to 180ºC. Line baking trays with baking paper.
STEP 2 Melt butter in a large saucepan over medium heat. Add golden syrup and stir until combined.
STEP 3 Combine the baking soda and water and stir into the butter mixture. STEP 4 Remove from heat. Add butter mixture to combined sugar, coconut, flour and oats. Stir to combine.
STEP 5 Roll small even-sized balls of mixture. Place on prepared trays, leaving a small space between each. Using back of a slightly wet spoon, press to flatten the biscuits.
STEP 6 Bake for 15-18 minutes or until golden. Allow to cool. Serve.
