MIGUEL’S AN­ZAC BIS­CUITS

SERVES 10 PREP 5 MIN­UTES COOK 20 MIN­UTES 32¢ EACH

150g but­ter

½ cup golden syrup 1½ tea­spoons bak­ing soda 2 ta­ble­spoons hot wa­ter 100g caster sugar

100g des­ic­cated co­conut 100g plain flour

100g rolled oats

STEP 1 Pre­heat oven to 180ºC. Line bak­ing trays with bak­ing pa­per.

STEP 2 Melt but­ter in a large saucepan over medium heat. Add golden syrup and stir un­til com­bined.

STEP 3 Com­bine the bak­ing soda and wa­ter and stir into the but­ter mix­ture. STEP 4 Re­move from heat. Add but­ter mix­ture to com­bined sugar, co­conut, flour and oats. Stir to com­bine.

STEP 5 Roll small even-sized balls of mix­ture. Place on pre­pared trays, leav­ing a small space be­tween each. Us­ing back of a slightly wet spoon, press to flat­ten the bis­cuits.

STEP 6 Bake for 15-18 min­utes or un­til golden. Al­low to cool. Serve.
