MASSAMAN SEAFOOD CURRY

1 ta­ble­spoon veg­etable oil 1 large red onion, cut into thin wedges 50g packet massaman curry paste 600g seafood mari­nara mix 2 tea­spoons corn­flour 375ml can light & creamy co­conut evap­o­rated milk 2 tea­spoons brown sugar 2 ta­ble­spoons lime or le­mon juice 150g snow peas, thinly sliced length­wise 1 medium red cap­sicum, thinly sliced ¼ cup chopped co­rian­der Lime or le­mon wedges, to serve

STEP 1 Heat oil in a large fry­ing pan over mod­er­ate heat. Add onion; cook and stir for 3 min­utes or un­til soft. Add curry paste; cook and stir for 30 sec­onds or un­til fra­grant.

STEP 2 Add mari­nara mix; stir to com­bine. Blend corn­flour with 1 ta­ble­spoon wa­ter.

Add corn­flour mix­ture and co­conut milk to seafood; bring to the boil. Re­duce heat; sim­mer, un­cov­ered, for 8–10 min­utes or un­til seafood is cooked.

STEP 3 Stir in sugar, juice, snow peas and cap­sicum; sim­mer for 2–3 min­utes or un­til veg­eta­bles are ten­der. Stir in co­rian­der.

Serve curry with lime or le­mon wedges.
