MASSAMAN SEAFOOD CURRY
SERVES 4 PREP 10 MINUTES COOK 20 MINUTES $3.45 PER SERVE
1 tablespoon vegetable oil 1 large red onion, cut into thin wedges 50g packet massaman curry paste 600g seafood marinara mix 2 teaspoons cornflour 375ml can light & creamy coconut evaporated milk 2 teaspoons brown sugar 2 tablespoons lime or lemon juice 150g snow peas, thinly sliced lengthwise 1 medium red capsicum, thinly sliced ¼ cup chopped coriander Lime or lemon wedges, to serve
STEP 1 Heat oil in a large frying pan over moderate heat. Add onion; cook and stir for 3 minutes or until soft. Add curry paste; cook and stir for 30 seconds or until fragrant.
STEP 2 Add marinara mix; stir to combine. Blend cornflour with 1 tablespoon water.
Add cornflour mixture and coconut milk to seafood; bring to the boil. Reduce heat; simmer, uncovered, for 8–10 minutes or until seafood is cooked.
STEP 3 Stir in sugar, juice, snow peas and capsicum; simmer for 2–3 minutes or until vegetables are tender. Stir in coriander.
Serve curry with lime or lemon wedges.
