Like all forms of pro­tein, chicken needs a lit­tle care to pro­duce a juicy, ten­der and crisp re­sult. But roast­ing is not dif­fi­cult.

Roast it un­til it’s just cooked. Over­cook­ing roast chicken makes it dry and taste­less.

Miguel’s sim­ple roast­ing method works per­fectly. Other roast­ing tech­niques some peo­ple like in­clude rais­ing or re­duc­ing the heat, turn­ing it from breast side to breast side, and cook­ing breast side down then flip­ping it over at the end.
