BA­NANA & CHOC-CHIP LOAF

MAKES 14 SLICES PREP 10 MIN­UTES COOK­ING 35-40 MIN­UTES 85¢ EACH

½ cup mashed ripe ba­nana ½ cup caster sugar

100g dairy-free choc chips 3 eggs, at room tem­per­a­ture 1/3 cup milk

¼ cup grape­seed oil or ex­tra-light olive oil

1¾ cups self-rais­ing flour (gluten-free if de­sired) Gluten-free ic­ing sugar (gluten-free if de­sired), to dust

STEP 1 Pre­heat oven to 190ºC/170ºC fan forced. Grease and line a 21cm x 10cm (base mea­sure­ment) loaf pan with bak­ing pa­per, ex­tend­ing pa­per at the long sides for han­dles.

STEP 2 Com­bine ba­nana, caster sugar, choc chips, eggs, milk and oil in a medium bowl. Add flour and stir un­til well com­bined. Us­ing a spoon, beat for 2 min­utes or un­til mix­ture is slightly paler in colour.

STEP 3 Pour mix­ture into pre­pared pan, check­ing the sur­face is smooth. Bake for 35-40 min­utes or un­til a skewer in­serted at cen­tre comes out clean. Re­move from oven. Stand in pan for 5 min­utes, then trans­fer to a wire rack to cool. Dust with ic­ing sugar. Cut into slices and serve.
