BANANA & CHOC-CHIP LOAF
MAKES 14 SLICES PREP 10 MINUTES COOKING 35-40 MINUTES 85¢ EACH
½ cup mashed ripe banana ½ cup caster sugar
100g dairy-free choc chips 3 eggs, at room temperature 1/3 cup milk
¼ cup grapeseed oil or extra-light olive oil
1¾ cups self-raising flour (gluten-free if desired) Gluten-free icing sugar (gluten-free if desired), to dust
STEP 1 Preheat oven to 190ºC/170ºC fan forced. Grease and line a 21cm x 10cm (base measurement) loaf pan with baking paper, extending paper at the long sides for handles.
STEP 2 Combine banana, caster sugar, choc chips, eggs, milk and oil in a medium bowl. Add flour and stir until well combined. Using a spoon, beat for 2 minutes or until mixture is slightly paler in colour.
STEP 3 Pour mixture into prepared pan, checking the surface is smooth. Bake for 35-40 minutes or until a skewer inserted at centre comes out clean. Remove from oven. Stand in pan for 5 minutes, then transfer to a wire rack to cool. Dust with icing sugar. Cut into slices and serve.
