Pick off any ripen­ing cit­rus be­fore the sea­son ends. If you can’t eat it all, pre­serve the ex­cess. Wash the fruit and place in glass jars, then cover with rock salt. Add a peppercorn, bay leaf and the juice of one of the fruits be­ing pre­served, then seal with a plas­tic lid.
