SERVES 4 PREP 15 MINUTES COOK 5 MINUTES
STEP 1 Place noodles, without flavour sachets, in a large heatproof bowl.
Cover with boiling water; stand for 2 minutes or until tender. Drain. Refresh under cold water. Using kitchen scissors, cut noodles into shorter lengths. Transfer to a large bowl.
3 x 85g packets instant 2-minute noodles
425g can tuna in springwater, drained, flaked
2 green onions, finely chopped
1 carrot, cut into matchsticks
1 green capsicum, cut into matchsticks
½ cup coriander leaves
2 tablespoons lime juice
1 tablespoon sesame oil
1 tablespoon sesame seeds, toasted
STEP 2 Add tuna, onion, carrot, capsicum and coriander to noodles; toss to combine. Whisk lime juice and oil in a bowl. Add to noodles; toss to combine. Season. Serve sprinkled with sesame seeds.
