These mini ap­ple pies are a delicious sweet treat.

LIT­TLE AP­PLE PIES

SERVES 12 PREP 20 MIN­UTES COOK 20 MIN­UTES

800g can sliced ap­ples, chopped

1/3 cup al­mond meal (ground al­monds)

1 ta­ble­spoon finely grated le­mon zest

½ tea­spoon ground cin­na­mon

3 sheets frozen short­crust pas­try, thawed

1 egg, lightly whisked

Icing sugar, to dust

Vanilla ice-cream, to serve

STEP 1 Pre­heat oven to 220ºC/200ºC fan forced. Grease a 12-hole (1/3-cup) muf­fin tray. STEP 2 Com­bine ap­ple, al­mond meal, zest and cin­na­mon in a bowl. Us­ing a 10cm round pas­try cut­ter, cut 12 discs from pas­try. Line pre­pared holes with pas­try. Spoon ap­ple mix­ture evenly into pas­try cases.

STEP 3 Cut re­main­ing pas­try into 5mm strips. Ar­range strips in a lat­tice pat­tern over fill­ing. Press strips to edge of pas­try cases to seal; trim ex­cess. Brush with egg. Bake for 20 min­utes or un­til golden. Stand in tray for 5 min­utes. Trans­fer to a wire rack to cool slightly. Dust with icing sugar. Serve with ice-cream.
