BEEF PATTIES ON SWEET CHILLI NOODLES
SERVES 4 PREP 15 MINUTES COOK 10 MINUTES $3.45 A SERVE
500g beef mince 2 tablespoons red curry paste 2 cloves garlic, crushed 2 tablespoons chopped coriander stems and roots, plus 1/2 cup coriander sprigs, extra 2 teaspoons peanut or vegetable oil 200g dried rice noodles 1/3 cup sweet chilli sauce, plus extra, to serve 1 teaspoon sesame oil Lime wedges, to serve
ONE Combine beef, paste, garlic and coriander in a bowl. Season. Shape into 12 patties. Heat oil in a large frying pan over moderately low heat. Add patties; cook for 4 minutes each side or until cooked through.
TWO Meanwhile, soak noodles in boiling water in a heatproof bowl for 5 minutes or until tender. Stir to separate strands. Drain. Toss noodles with sweet chilli sauce, sesame oil and 1/3 cup of the coriander sprigs.
THREE Divide noodles among serving plates, top with patties, extra sweet chilli and remaining coriander sprigs. Serve with lime wedges.
