BEEF PAT­TIES ON SWEET CHILLI NOO­DLES

500g beef mince 2 ta­ble­spoons red curry paste 2 cloves gar­lic, crushed 2 ta­ble­spoons chopped co­rian­der stems and roots, plus 1/2 cup co­rian­der sprigs, ex­tra 2 tea­spoons peanut or veg­etable oil 200g dried rice noo­dles 1/3 cup sweet chilli sauce, plus ex­tra, to serve 1 tea­spoon sesame oil Lime wedges, to serve

ONE Com­bine beef, paste, gar­lic and co­rian­der in a bowl. Sea­son. Shape into 12 pat­ties. Heat oil in a large fry­ing pan over mod­er­ately low heat. Add pat­ties; cook for 4 min­utes each side or un­til cooked through.

TWO Mean­while, soak noo­dles in boil­ing wa­ter in a heat­proof bowl for 5 min­utes or un­til ten­der. Stir to sep­a­rate strands. Drain. Toss noo­dles with sweet chilli sauce, sesame oil and 1/3 cup of the co­rian­der sprigs.

THREE Di­vide noo­dles among serv­ing plates, top with pat­ties, ex­tra sweet chilli and re­main­ing co­rian­der sprigs. Serve with lime wedges.
