Wash a cal­ico ham bag in a so­lu­tion of two cups wa­ter and one ta­ble­spoon white vine­gar, then wring out. Cover the cut ham with the re­served rind or a piece of bak­ing pa­per. Place ham in bag and keep in cold­est part of fridge for up to three weeks. Rinse the bag in the so­lu­tion ev­ery two to three days (and change the pa­per if us­ing) to help keep ham moist and fresh.
