SERVES 8 PREP 15 MINS COOK 5 MINS $1.25 A SERVE ✚ 90g fresh gin­ger, peeled, ✚ 1.5kg seed­less wa­ter­melon, peeled, finely grated coarsely chopped

✚ 1/2 cup le­mon juice ✚ 2 cups ice cubes

✚ 1/3 cup lime juice ✚ 1/2 cup mint sprigs

✚ 1/2 cup caster sugar ✚ 1 or­ange, thinly sliced

ONE Press gin­ger through a sieve over a saucepan to ex­tract as much juice as pos­si­ble. Add le­mon juice, lime juice and sugar to pan. Cook and stir over low heat, with­out boil­ing, un­til sugar dis­solves. Bring to the boil. Re­move from heat. Cool; strain into a large jug or punch bowl.

TWO Blend or process wa­ter­melon in batches un­til pureed. Pour into jug with syrup. Stir to com­bine. Add ice cubes. Serve topped with mint and or­ange.
