WATERMELON & GINGER ZINGER
SERVES 8 PREP 15 MINS COOK 5 MINS $1.25 A SERVE ✚ 90g fresh ginger, peeled, ✚ 1.5kg seedless watermelon, peeled, finely grated coarsely chopped
✚ 1/2 cup lemon juice ✚ 2 cups ice cubes
✚ 1/3 cup lime juice ✚ 1/2 cup mint sprigs
✚ 1/2 cup caster sugar ✚ 1 orange, thinly sliced
ONE Press ginger through a sieve over a saucepan to extract as much juice as possible. Add lemon juice, lime juice and sugar to pan. Cook and stir over low heat, without boiling, until sugar dissolves. Bring to the boil. Remove from heat. Cool; strain into a large jug or punch bowl.
TWO Blend or process watermelon in batches until pureed. Pour into jug with syrup. Stir to combine. Add ice cubes. Serve topped with mint and orange.
