STRAWBERRY & WATERMELON SUNDAES
SERVES 6 PREP 20 MINS + 1 HR TO CHILL COOK 5 MINS $2.40 A SERVE
✚ 1kg seedless watermelon, ✚ 1 tbsp rosewater peeled, cut into ✚ 2 tbsp icing sugar bite-size pieces ✚ 1.2 litres strawberry ✚ 500g strawberries, ice-cream halved ✚ 12 bought meringue ✚ 1 cup caster sugar kisses
ONE Combine watermelon and two-thirds of the strawberries in a large heatproof bowl and set aside. Combine sugar and 1 cup water in a saucepan over moderately high heat; cook and stir, without boiling, for 5 mins or until sugar dissolves. Add rosewater; pour over fruit. Cover and refrigerate for 1 hr.
TWO Process icing sugar and remaining strawberries in a blender until smooth; strain through a fine sieve. Refrigerate until required.
THREE Divide fruit among serving glasses; top with scoops of ice-cream. Drizzle with strawberry puree; serve with meringue kisses.
