✚ 1kg seed­less wa­ter­melon, ✚ 1 tbsp rose­wa­ter peeled, cut into ✚ 2 tbsp ic­ing sugar bite-size pieces ✚ 1.2 litres straw­berry ✚ 500g straw­ber­ries, ice-cream halved ✚ 12 bought meringue ✚ 1 cup caster sugar kisses

ONE Com­bine wa­ter­melon and two-thirds of the straw­ber­ries in a large heat­proof bowl and set aside. Com­bine sugar and 1 cup wa­ter in a saucepan over mod­er­ately high heat; cook and stir, with­out boil­ing, for 5 mins or un­til sugar dis­solves. Add rose­wa­ter; pour over fruit. Cover and re­frig­er­ate for 1 hr.

TWO Process ic­ing sugar and re­main­ing straw­ber­ries in a blender un­til smooth; strain through a fine sieve. Re­frig­er­ate un­til re­quired.

THREE Di­vide fruit among serv­ing glasses; top with scoops of ice-cream. Driz­zle with straw­berry puree; serve with meringue kisses.
