✚ 1 tbsp le­mon juice ✚ 1kg seed­less wa­ter­melon,

✚ 1 tbsp red wine vine­gar peeled, cut into ✚ 2 tbsp veg­etable or bite-size pieces olive oil ✚ 50g fetta, crum­bled

✚ 100g baby rocket leaves ✚ 1/4 cup pine nuts, toasted

ONE Whisk le­mon juice, vine­gar and oil together in a small bowl un­til well com­bined. Sea­son. TWO Place rocket, pine nuts and wa­ter­melon in a large bowl. Add dress­ing; toss well to com­bine. Serve scat­tered with fetta.
