BEEF TACOS WITH CO­RIAN­DER SALSA

SERVES 6 PREP 15 MINS + 30 MINS TO MAR­I­NATE COOK 10 MINS $3.50 A SERVE

1 bunch co­rian­der, leaves picked, stems re­served

¼ cup veg­etable or olive oil

2 gar­lic cloves, crushed

1 tbsp ground cumin

1 tbsp ground oregano

700g beef rump steak

1 large av­o­cado, finely chopped

400g can kid­ney beans, rinsed

250g cherry toma­toes, quar­tered

2 tbsp lime juice

8 soft corn tor­tillas

½ cup sour cream

ONE Finely chop co­rian­der stems. Place in a bowl. Add oil, gar­lic, cumin and oregano; mix well. Trans­fer half of mix­ture to a glass bowl. Rub re­main­ing mix­ture over beef. Place beef in a shal­low glass dish. Cover with plas­tic food wrap. Chill for 30 mins.

TWO Pre­heat a bar­be­cue grill to mod­er­ate. Cook beef, brush­ing oc­ca­sion­ally with re­served mix­ture, for 4 mins each side for medium or un­til cooked to your lik­ing. Trans­fer to a plate. Cover with foil; rest beef for 10 mins. Slice.

THREE Mean­while, com­bine av­o­cado, beans, tomato, juice and co­rian­der leaves in a bowl. Cook tor­tillas on grill for 30 secs each side or un­til heated.

FOUR Serve beef with salsa, tor­tillas and sour cream.
