RICOTTA, PEA & HAM PANCAKES

½ cup self-rais­ing white flour

½ cup self-rais­ing whole­meal flour

100g smooth re­duced­fat ricotta [pack­aged] 1 egg

1¼ cups re­duced-fat milk 1 cup frozen baby peas, thawed

75g ham, finely chopped but­ter, to grease Greek-style re­duced­fat nat­u­ral yo­ghurt, to serve

ONE Sift flours into a large bowl; re­turn husks to bowl. Make a well at the cen­tre. Whisk ricotta, egg and milk in a jug. Whisk ricotta mix­ture into flour un­til smooth, then add peas and ham; mix well. TWO Lightly grease a non-stick fry­ing pan with a lit­tle but­ter, then heat over mod­er­ate heat. Cook ¼-cup mea­sures of pan­cake mix­ture, in batches, for 2 mins or un­til bub­bles ap­pear on the sur­face. Turn pancakes, cook for a fur­ther 2 mins or un­til browned and cooked through.

THREE Serve pancakes with yo­ghurt.
