RICOTTA, PEA & HAM PANCAKES
MAKES 12 PREP 15 MINS COOK 20 MINS 70¢ EACH
½ cup self-raising white flour
½ cup self-raising wholemeal flour
100g smooth reducedfat ricotta [packaged] 1 egg
1¼ cups reduced-fat milk 1 cup frozen baby peas, thawed
75g ham, finely chopped butter, to grease Greek-style reducedfat natural yoghurt, to serve
ONE Sift flours into a large bowl; return husks to bowl. Make a well at the centre. Whisk ricotta, egg and milk in a jug. Whisk ricotta mixture into flour until smooth, then add peas and ham; mix well. TWO Lightly grease a non-stick frying pan with a little butter, then heat over moderate heat. Cook ¼-cup measures of pancake mixture, in batches, for 2 mins or until bubbles appear on the surface. Turn pancakes, cook for a further 2 mins or until browned and cooked through.
THREE Serve pancakes with yoghurt.
