6 slices whole­grain bread, crusts re­moved olive oil cook­ing spray 180g can tuna in spring­wa­ter, well drained, flaked

2 cel­ery sticks, finely chopped

¼ cup may­on­naise ¼ cup cot­tage cheese torn pars­ley leaves, to serve

ONE Pre­heat oven 180°C/160°C fan. Lightly spray both sides of bread slices with oil.

TWO Press bread into 6 holes of a 12-hole (1/3-cup) muf­fin tray to form shells. Bake for 20 mins or un­til golden and crisp. Cool.

THREE Com­bine tuna, cel­ery, may­on­naise and cot­tage cheese in a bowl. Spoon tuna mix­ture into bread cases. Top with pars­ley.
