+ Use a metal bowl to beat the egg­whites. Make sure it (and the beaters) are com­pletely clean and free from any grease. + Dab a lit­tle egg­white onto the bak­ing tray to stop the bak­ing pa­per from slip­ping. + While bak­ing, the pav may leak a lit­tle sugar syrup, but the crust should still be firm.
