SPIRALISED STIR-FRY

Miguel Maestre shares a fun way to en­cour­age kids to eat more veg­eta­bles.

Miguel Maestre puts ve­gies through a spi­raliser to cre­ate a tasty meal, full of hid­den good­ness. The kids will never know!

SERVES 4 PREP 15 MINS 1 tbsp peanut oil ½ bar­be­cue chicken, meat only, shred­ded 3 tbsp sweet chilli sauce 1/3 cup soy sauce

1 egg

1 sweet potato, spiralised 2 zuc­chini, spiralised 2 car­rots, spiralised COOK 10 MINS

4 radishes with leaves, all thinly sliced

2 spring onions, thinly sliced

½ cup edamame beans 3 tbsp hoisin sauce

2 tbsp crispy fried onions hand­ful basil leaves, torn lime wedges, to serve

ONE Heat peanut oil in a wok un­til smok­ing hot. Add chicken and stir-fry un­til start­ing to brown. Add soy and sweet chilli sauces, and stir to com­bine.

TWO Break egg into wok, add spiralised veg­eta­bles and toss to com­bine.

THREE Add radish, radish leaves, spring onion and edamame. Add hoisin sauce and com­bine well.

FOUR Top with fried onions and basil leaves. Serve with a wedge of lime.
