Miguel Maestre puts vegies through a spiraliser to create a tasty meal, full of hidden goodness. The kids will never know!
SERVES 4 PREP 15 MINS 1 tbsp peanut oil ½ barbecue chicken, meat only, shredded 3 tbsp sweet chilli sauce 1/3 cup soy sauce
1 sweet potato, spiralised 2 zucchini, spiralised 2 carrots, spiralised COOK 10 MINS
4 radishes with leaves, all thinly sliced
2 spring onions, thinly sliced
½ cup edamame beans 3 tbsp hoisin sauce
2 tbsp crispy fried onions handful basil leaves, torn lime wedges, to serve
ONE Heat peanut oil in a wok until smoking hot. Add chicken and stir-fry until starting to brown. Add soy and sweet chilli sauces, and stir to combine.
TWO Break egg into wok, add spiralised vegetables and toss to combine.
THREE Add radish, radish leaves, spring onion and edamame. Add hoisin sauce and combine well.
FOUR Top with fried onions and basil leaves. Serve with a wedge of lime.
