SERVES 4-6 PREP 15 MINS COOK 20 MINS 125g but­ter, soft­ened

½ cup caster su­gar

2 eggs

1 tsp vanilla ex­tract

2 tsp in­stant cof­fee

1 tbsp milk, warmed

1¼ cups self-rais­ing flour, sifted

100g dark choco­late, melted ice-cream or thick cream, to serve


1 cup boil­ing wa­ter

2/3 cup brown su­gar

1 tbsp co­coa

ONE Pre­heat oven to 180°C. Lightly grease four 1¼ cup-ca­pac­ity oven­proof dishes, or one 5-cup oven­proof dish.

TWO In a large bowl, us­ing an elec­tric mixer, cream but­ter and su­gar to­gether un­til light and fluffy. Add eggs, one at a time, beat­ing well af­ter each ad­di­tion. Beat in vanilla.

THREE Dis­solve cof­fee in milk. Fold flour into but­ter mix­ture al­ter­nately with milk mix­ture. Stir in choco­late. Spoon mix­ture evenly be­tween pre­pared dishes.

FOUR To make sauce, com­bine all in­gre­di­ents in a jug. Pour an even amount over each pud­ding.

FIVE Bake for 15-20 mins (or 35-40 mins for one large dish), or un­til puffed and firm. Serve hot, with ice-cream or thick cream.
