CHOCOLATE SELFSAUCING PUDDINGS
SERVES 4-6 PREP 15 MINS COOK 20 MINS 125g butter, softened
½ cup caster sugar
1 tsp vanilla extract
2 tsp instant coffee
1 tbsp milk, warmed
1¼ cups self-raising flour, sifted
100g dark chocolate, melted ice-cream or thick cream, to serve
1 cup boiling water
2/3 cup brown sugar
1 tbsp cocoa
ONE Preheat oven to 180°C. Lightly grease four 1¼ cup-capacity ovenproof dishes, or one 5-cup ovenproof dish.
TWO In a large bowl, using an electric mixer, cream butter and sugar together until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
THREE Dissolve coffee in milk. Fold flour into butter mixture alternately with milk mixture. Stir in chocolate. Spoon mixture evenly between prepared dishes.
FOUR To make sauce, combine all ingredients in a jug. Pour an even amount over each pudding.
FIVE Bake for 15-20 mins (or 35-40 mins for one large dish), or until puffed and firm. Serve hot, with ice-cream or thick cream.
